Such a beautiful plate of colour at yesterday’s wild lunch. Our guests filleted the mackerel on Saturday and on Sunday they ate it hot smoked and soused with pickled rock samphire, pickled crab apples, wild salad leaves and sorrel mayonnaise. There was also a rock samphire fritter which didn’t make it on the plate until after I’d taken the photo! Great weekend guys.
