Recipe: Verde Maria Healthy Cocktail
Avocado, chilli, lime and pickle juice...what a wonderful concoction!
SERVES 1
FOR THE COCKTAIL
• 25ml white rum
• 25ml green chilli liqueur
• 125ml Maria Mix (see below)
• Ice cubes (to serve)
• Lime wedges, avocado slices, cornichons and rosemary sprigs (to garnish)

FOR THE MARIA MIX
• 1 cucumber, peeled and de-seeded• 6 sprigs of coriander
• 50ml Pickle Juice (see La Soirée by Ping Pong recipe)
• 1 green pepper
• Juice of 1⁄2 a lime
• 1 celery stalk
• 1 celery stalk
• Pinch each of ground cumin, celery salt, ground coriander and coarsely ground black pepper• 100ml water
• 10 dashes of Tabasco Mild Green Pepper Sauce
• 10 dashes of Tabasco Mild Green Pepper Sauce
1. To make the Maria Mix, combine all the ingredients in a mixer and blend to a purée. Pass through a muslin into a bowl.
2. Build the ingredients over ice in a Rocks glass, starting with the rum, then the green chilli liqueur and, finally, the Maria Mix.3. Stir thoroughly, and garnish with a lime wedge, a slice of avocado, cornichons and a sprig of rosemary.
