Recipe: healthy and zesty mojito almonds
120g whole natural almonds
Fine shreds of lime zest and 2 tbsp lime juice
2 tbsp white rum
2 tsp caster sugar
Mint leaves and lime wedges, to serve
1. Put the almonds into a dry frying pan and heat for about 1 minute to toast them, shaking
the pan occasionally.
2. Add the lime zest, lime juice, rum and caster sugar.
3. Stir well, then cook for a few moments until the liquid has evaporated and the almonds
4. Cool, then serve, garnished with mint leaves and lime wedges.
TIP: If you don’t have a lime to hand, replace with lemon juice and zest.
