This London cafe just reinvented the avocado
Despite its controversial eco credentials, the avocado is still undeniably a big deal. Though the wellbeing hipster crowd is gradually tiring of the humble on-toast format, the constant reinvention means it’s still flooding our Instagram feeds.
The latest culprit is Bluebird in Chelsea, which is hosting the , The Avocado Show, from 11-12th March.
Using solely sustainable avocados, the ‘world’s first all-avocado concept’ involves five innovative creations — influenced by chef Jamie can Heije — in which they’re swapping trad burger buns for avocados, salad plates for avocados and English muffins for avocados.
It’s not the only London cafe making the most of this can-never-been-described-as-humble fruit. Avo Bar uses them inventively in every single dish served in the restaurant, including avo butter in the pancakes and the topping of the green cheesecake. Spoiler (but not a shocker): Everything’s a shade of green.

Another brand utilising the avocado, but this time the waste, is Sri Lankan brand Amma. Known for its beautifully toned aprons and totes, they use stones to create their signature pink, peach and warm orange natural dyes.
